Ingredients

  • 1 cup of white organic quinoa
  • 1½ cups water
  • 1½ cups cherry tomatoes, halved
  • 1 cup mini mozzarella balls
  • A handful of fresh spinach leaves and arugula
  • Basil leaves
  • Toasted and sliced Brazil nuts
  • 2 tablespoons olive oil
  • 2 tablespoons basil dressing
  • Salt & pepper to taste

Preparation Steps

1. Cook the quinoa
Rinse the quinoa thoroughly under cold water to remove any bitterness.
Place it in a saucepan with 1½ cups of water and a pinch of salt. Bring to a boil, then reduce to low heat, cover, and simmer for about 15 minutes, or until the water is absorbed. Fluff with a fork and let it cool slightly.

2. Prepare the fresh ingredients
While the quinoa cooks, halve the cherry tomatoes, slice the Brazil nuts, and rinse your spinach, arugula, and basil leaves.

3. Combine the salad base
In a large mixing bowl, layer the spinach and arugula first. Add the cherry tomatoes, mini mozzarella balls, and fresh basil leaves.

4. Add the quinoa
Spoon the warm (but not hot) quinoa on top of the salad mix. This will slightly soften the greens while keeping them crisp.

5. Dress and finish
Drizzle olive oil and basil dressing evenly over the salad. Sprinkle with salt and pepper to taste, and top with toasted, sliced Brazil nuts for a nutty crunch.

6. Serve immediately
Serve in a shallow bowl for a beautiful presentation — the vibrant layers of quinoa, greens, and cherry tomatoes make this dish as photogenic as it is delicious!
